This is my favourite Huddle lunchtime special from our local sandwich shop – but whilst you can get this style of sandwich at places like McDonalds and Burger King as well, fresh ingredients and the satisfaction of making it yourself make it taste so much better!
You can use any kind of chicken for this recipe, hot or cold – I prefer a bread-crumbed chicken fillet as it adds extra bite. Take a fresh white baguette and slice in two, spread both sides of bread with mayonnaise. Then add the chicken and smother it with sweet chilli sauce – the best sauce available in UK shops is Blue Dragon brand (I’ve even got my own bottle of this stuff in our sandwich shop!) – and add loads of fresh lettuce on top. A word of warning though, you’re going to need a napkin…

Stunning! I actually had this yesterday, but instead of the breadcrumbed fillet it was freshly chargrilled. Also, fat slices of tomato adds the perfect final touch.
I’m hungry now…..
